I know there are spice hunters out there, and this post is inspired by and dedicated to such souls. Thesis Spicy Noodles are just the thing you might want in your life.
They are absolutely fiery delicious, a perfect balance of HOT with a good dose of umami and a tad bit of sweet.
These spicy garlic noodles are perfect for lazy days, as they happen in under 15 minutes, and can be customizable in so many ways.
I am always craving for spicy and hot, and these Asian noodles fit the bill. Saying that, you can always control the heat in your noodle bowl by adding more or less of my cracking secret ingredient… my beloved Chili Oil.
I can’t believe how quickly that oil is disappearing from my pantry just a few days after making my first chili oil at home. It’s literally going on everything… my soups, my salads, my stir fries and now in these noodles.
And no worries if you don’t have your own chili oil bottle yet (though I strongly persuade you to make one quickly, it’s so so good). I will give you a few substitutions down below so you can still make this fiery noddle bowl.
- They’re absolutely delicious. Like nodding your head happily after every bite, delicious.
- They happen in 15 minutes. Perfect contender for a quick lunch or lazy, yet delicious, quick dinner.
- This dish can be further loaded with protein. Our first choice is ground pork, followed by ground chicken or ground turkey. You can keep it vegetarian by adding more veggies, too.
Chili Oil is the latest craze in Asian food. From dumplings to chow mein and everything in between, your food gets elevated with a delicious and addictive, aromatic and appetizing, kick of spice!!
You can very easily buy it in any Asian grocery store, but please don’t, it’s very easy to make your own chili oil in your kitchen. We have a whole post talking about Chili Oil.
You are basically just infusing oil with chili flakes and a few other aromatics. It’s a great condiment to have in your pantry. Trust me.
One look at my spicy noodle bowl and I am sure you don’t need much convincing. So once you have chili oil, the rest of ingredients also come from your regular pantry.
- Noodles – Today we used rice fettuccini.
- Aromatics – Shallots, green onions, garlic, ginger.
- Spicy Sauce – Chili oil, soy sauce, honey, rice vinegar, sesame oil.

1. Cook noodles: Boil water and cook the rice noodle according to the instructions on the packet. Drain water and keep them aside.
2. Make omelette strips: While the water is boiling, heat oil in a large omelet pan. Make an omelet and cut it into thin strips.
3. Make spicy chilli sauce: Mix all sauce ingredients of sauce in a bowl.
4. Cook the aromatic & sauce: Heat oil in a pan and sauté shallots and the white part of green onions for a couple of minutes. Add in ginger and garlic and sauté for 2-3 minutes. Add in prepared chili sauce and cook for 2-3 of minutes, stirring occasionally.
5. Toss in noodle and omelette strips: Mix in cooked noodles and omelette strips and stir well, till they are well coated with chili sauce. Garnish it with more chili oil (optional) according to taste, along with the green part of green onions, chopped cilantro and sesame seeds.
1. These spicy noodles are great standalone. That’s their purpose. Cooking for lazy days and yet you craving something fulfilling and tasty. Still they can go great as a side for some Asian style salmon or chicken. We love them with our upcoming Asian Garlic Shrimp.
2. If thinking to keep it vegetarian, serve them over a bed of sautéed veggies.
3. Serve it with our Korean Ground Beef, Mongolian Ground Beef, or Ground Turkey Stir Fry. So YUM!
- Add in 2-3 Tbsp peanut butter to the spicy sauce and make it a creamier version. This sauce turns up great too.
- You can garnish these noodles with crushed peanuts for extra crunch and flavor.
- When sautéing onion and green onion, add in ground pork (very common in spicy noodles) or your preferred ground meat and make these Asian pork spicy noodles. Great protein boost.
- Add veggies like mushrooms, broccoli, bell peppers, carrots, cabbage, spinach, bok choy to the dish to bulk it up more.
- You can use other noodles instead of rice noodles. Ramen noodles or udon noodles are great alternatives for rice noodles.
Instead of chili oil, you can use other substitutions like sambal oelek, gochujang chili paste, hot Asian chili garlic paste, sriracha (a good dose of it), or simply lots of red chili flakes in absence of all the above. Just use them according to your heat tolerance level.
Well, then they won’t be spicy noodles right? These are so created for spice lovers. Saying that, yes of course they can be made less spicy. Just start with less chili oil in your sauce mix.
You can always add more in the final dish as garnishing. You should see me adding it to my bowl at the table. Absolutely love that stuff.
These Spicy Noodles are great as leftovers in an airtight container in the fridge for up to 3 days. To reheat the noodles, cook on medium heat on stovetop until warm. You can also microwave them, covered, until warm.

2 Tbsp honey
2 tsp rice vinegar

- Heat 1 Tbsp oil and make a thin omelet in a large pan. Cut it into thin strips.
- Heat 1 Tbsp oil over medium high heat and sauté shallots and the white part of green onions for a couple of minutes. Add in ginger and garlic and sauté for 2-3 minutes.
- Add in prepared chili sauce and cook for 2-3 of minutes, stirring occasionally.
- Mix in cooked noodles and omelet strips. Stir well till the noodles are well coated with chilli sauce.
- Garnish it with more chili oil (optional) according to taste, along with the green part of green onions and sesame seeds.
