- Heat the oil in a large frying pan over low-medium heat and fry the onion and a pinch of salt for 10min, until softened. Turn up heat to medium-high, add the beef, stir to break up any lumps. Cook until browned all over and until any liquid in the pan has evaporated, about 8min. Set aside to cool for 10min.
- Add the gherkins, mustard, breadcrumbs, onion granules, paprika and plenty of salt and freshly ground black pepper. Mix well. Next mix in 1 of the eggs, followed by the cheese. Tip into a roughly 1 liter ovenproof pie or serving dish.
- Preheat oven to 200°C (180°C fan) mark 6. Lightly beat the remaining egg and brush some over the edges of the dish, then lay the pastry on top. Press/crimp the pastry on to the dish to seal and trim excess. If you like, reroll the trimmings and stamp out shapes or letters. Stick on to your pastry lid using some of the beaten egg and cut a steam hole in the center of the lid. Brush pastry lid all over with more egg to glaze.
- Cook in the oven for 25-30min, or until deep golden and piping hot. Serve with a crisp green salad, if you like.
